Dr. Birol KAYİŞOĞLUBu araştırma, 1997 yılında Gebze'de TÜBİTAK Gıda Bilimi ve Teknolojisi Araştırma Enstitüsünde yürütülmüştür. Araştırmanın amacı; sanayi özelliği taşıyan bazı tarımsal ürünlerin elektriksel iletkenlik değerlerinin saptanması ve elektriksel iletkenliğin ürünün sıcaklığı, kırılma indisi, pH ve brix değerleri karşısındaki değişimlerinin saptanmasıdır. Araştırmada aşağıdaki sonuçlar elde edilmiştir; Yapılan istatistik analizlerden normal t-testine göre seçilen tarımsal ürünlerden sarı elma ve havucun elektriksel iletkenlik değerinin 0,01 seviyesinde önemli olmadığı, ancak sıcaklık, pH, brix değerlerinin 0,01 seviyesinde önemli olduğu görülmüştür. Bunun dışında denemede kullanılan diğer ürünlerin elektriksel iletkenlik değerlerinin sıcaklık, pH, kırılma indisi ve brix değerleri ile karşılaştırıldığında 0,01 seviyesinde önemli olduğu görülmüştür. Matematiksel yöntemle elde edilen sıcaklık - elektriksel iletkenlik ilişkisine ait değerler ile araştırmada elde edilen sıcaklık - elektriksel iletkenlik ilişkisine ait değerler arasında sarı elma, portakal ve limon dışında bir benzerlik görülmemiştir.en_US

The aim of this research is determination of electrical conductivity values of some agricultural products that are important for industries and determination of changes on electrical conductivity according to temperature of product, refractive index, pH and values of Brix. The result of this research are the following; According to results of statistics analyses, electrical conductivies of yellow apples and carrots that were used in experiments don't depend on refractive index but depend on level of %1 alfa, pH and Brix values. In addition, it is determined that Electrical conductivities of products except yellow apples and carrots depent on temperature, refractive index, pH, Brix and refractive index on %1 alfa level. With values of temperature and conductivity that obtain from mathematical method ve values of temperature-conductivity that obtain from this, research aren't related one another except yellow apple, orange and lemon.en_US
