Oz[Abstract Not Available]Öğe The effect of non-starter Enterococcus sp on some properties of White Pickled Cheese(A V A Agrarverlag, 2006) Kaptan, B.; Simsek, O.; Kurultay, S.Non-starter lactic acid bacteria, Enterococcus faecium and Enterococcus. faecalis, combined with commercial starter culture were added to cheese milk at two different rates (1,0 and 0.25%). The effects on some chemical, microbiological and sensory properties and on formation of biogenic amines of White Pickled Cheese (WPC) during the 6 months ripening period were investigated. Dry matter (DM), fat, pH, total nitrogen (TN), water-soluble nitrogen (WSN) values ranged between 40.63-42.53%; 17.00-19.25%; 4.43-4.61; 2.61-2.73% and 0.84-0.94%, respectively. The numbers (log cfu/g) of the Enterococcus, proteolytic and lipolytic microorganism are as follows: 4.62-6.91; 3.48-4.00 and 3.27-3.85, respectively. During ripening, ranging limits of (mg/kg) biogenic amines were: histamine 25.39-80.69, tyramine 172.34-273.25, cadaverine 62.25-87.95, putrescine 83.38-88.51, phenylethylamine 52.94-127.74 and tryptamine 13.05-17.07. With the exception of phenylethylamine, none of the biogenic amines exceeded the toxic threshold. Total sensory scores also ranged between 20.9-23.0. Although some decreases were observed in total sensory scores for all cheese groups after 4 months of ripening, cheese samples containing different levels of Enterococcus were liked equally by the panelists. Different culture groups and ripening periods affected the determined parameters significantly (p < 0.01).Öğe The Effects of the Use of Different Stabilizer on Some Quality Criteria in Industrial Produced Ice Cream(Univ Namik Kemal, 2006) Simsek, O.; Tuncay, I.; Bilgin, B.It has been investigated the use of different stabilizer on the affections of the some quality criteria of the ice cream in industrial ice cream production which is increased the consumer demand day by day due to the hygienic process, high quality conscious and understanding on the consumer demand. In this research, a simple vanillin ice cream formulation was chosen. Six different samples were produced according to the industrial process with different stabilizer at the same rate on the condition that the stabilize of the other components. The average total pH, partial melting period, whole melting period and viscosity were found between 6,31 and 6,39, 36,63 and 75,63 minute, 53,47 and 129,93 minute, 104,56 and 883,31 cp respectively. The average total sensory values were found between 2,8 and 3,86 from the above 5 point.Öğe Factors affecting the incidence and severity of vasospasm after subarachnoid haemorrhage(Springer-Verlag Wien, 2008) Hamamcioglu, M. K.; Kilincer, C.; Altunrende, E.; Hicdonmez, T.; Simsek, O.; Akyel, S.; Cobanoglu, S.Cerebral vasospasm remains the leading cause of death and permanent neurological deficit after subarachnoid haemorrhage. We report our clinical experience with a series of 325 patients, in order to identify the factors affecting the incidence aid severity of vasospasm, and to determine its effect on the outcome. Data obtained in all patients with subarachnoid hemorrhage between 1996 and 2005 at the Neurosurgery Department of Trakya University Medical Faculty were reviewed. Patient characteristics, computed tomography and angiography findings, existence of clinical vasospasm, the degree of clinical deterioration, and outcome were analyzed. Sixty-one patients (18.8%) experienced clinical vasospasm. The average beginning day of the clinical vasospasm was 4.8 (+/- 3.2) days (range, 1-15 clays). The clinical decline attributable to vasospasm lasted 12.5 (+/- 6.9) days on average (range, 4-36 days). The mean GCS at the the initial day of vasospasm was 11.3 (+/- 3) points (range, 5-15 points). The worst GCS during the course of vasospasm was 7.2 (+/- 4) points on average (range, 3-14 points). Thirty-seven of 61 patients had permanent motor deficit after vasospasm. Forty patients had infarcted areas on their CT scan. The anterior cerebral artery territory was involved in 31 of them. Twenty-three patients died and 38 patients recovered from vasospasm. The presence of vasospasm was correlated with poor Outcome. We found that the initial loss of consciousness, motor deficit at admission, arterial hypertension, intraventricular blood, and higher Fisher's grade on CT scan correlated with the increased risk of vasospasm.Öğe A Researh on Determination of The Drinking Milk Consuming Habits and The Factors Affecting These Habits in Istanbul Province(Univ Namik Kemal, 2005) Simsek, O.; Cetin, C.; Bilgin, B.In this research, drinking milk consuming habits of 1000 interviewers representing 4 different social and economic groups were determined. According to the research results; it was determined that most of the interwiewers have no drinking milk habits orderly. Total milk consumption is 94 mL per day and 34 L per year, per head. Furthermore, most of the interviewers have not enough information about drinking milk. Another interesting result is that similar answers were obtained from the all interviewers representing different social and economic groups.
